Paleo Pulled Pork

As a student, I am all for those recipes you set in the morning, and then you come back from class and all you have to do is EAT! After 8 hours on campus, this is great! What's cool about this recipe, is I literally set everything in the crockpot bowl the night before and all I did in the morning was transfer from the fridge to the slow cooker base and walk out the door.

But my problem with pulled pork, is the amount of barbecue sauce it is drenched in and the high amount of unnecessary calories and sugar it adds to my diet. No... thank... you! So I hope you all enjoy this wholesome, real-food, oil-free, processed ingredient free dish!

4 lb. boneless pork butt
sea salt & black pepper
4 cloves garlic, mashed
2 1" cuts of fresh ginger, grated
1 yellow onion, chopped
1 tbs. Chinese 5-spice
1 tsp. chili powder
1/2 tbs. cinnamon
1/4 c. dry white wine
2 tbs. tomato paste
1 tbs. molasses
juice of 2 lemons
chives for topping

Yields ~ 12 servings 

Directions:  Place the onions, ginger, tomato paste, molasses, and lemon juice in a slow cooker. Rub, 5-spice, cinnamon, chili powder sea salt and black pepper onto pork butt and place on top of mixture in slow cooker. Set it on high, and forget it for 6-8 hours!

After time has finished, take meat log out and shred with two forks on a cutting board. You can keep some of the liquid by straining it, but I didn't have much left — good sign!

You can enjoy this shredded pork on its own like I did with some garnished chives, or you can serve alongside polenta, quinoa, a salad, a grain-free bun? Mmmm...
