Chocolate Coated Dates

Happy almost Valentines day! I hope that this year, instead of opting for those sugary, artificial, processed goodies that will cost you 10x more today then they will next week, you opt for something homemade! Man, I would love a homemade valentines gift, no? What about ones that look like these?

Usually, I wouldn't post a recipe about something SOO easy, but this was so cool and so yummy that I just had too. Plus, I just stopped by Safeway and they have this ridiculous chocolate covered strawberry package with just 4 strawberries for $12.99!! This is unreal people, make your own, make it paleo, make it yummy, make it personal and get this... it'll be 3 x cheaper!

Recipe:

12 Medjool dates, pitted

Chocolate covering:
6 oz. 85% Extra Dark Chocolate
6 oz. Milk Chocolate
2 tsp. Coconut oil, melted

Toppings:
Pistachio dust
Sweetened coconut flakes
Sprinkles
Mini Chocolate chips

Fillings:
Walnut halves
Pistachio halves
Marzipan
Pitted cherries
Peanut Butter
Chopped Almonds
Nutella



Directions: I like to keep my dates in the freezer, then pull them out right before use and take the pits out. Just cut them lengthwise (but keep them in tact, don't cut through the whole date). Take the pit out, fill them with whatever filling you choose and try to "seal" them back together. Warning— don't over fill them, or they won't close. After i've sealed them with the fillings inside, I put them back in the freezer for ~ 20 minutes.

Temper your chocolates, dark + milk. Once it is completely melted, add coconut oil for that extra gloss and this will also help the chocolate create a hard shell for your dates. Take the dates out of the freezer, dip them in chocolate, top them with topping, and set on a parchment paper. Set them in the fridge or freezer until service! They won't melt, don't worry, but better left cold. If you do put them in the freezer, give them ~ 5 minutes of thaw time before service! I put mine in tiny little cupcake liners, but you can just serve them stacked up if you want!

Peanut butter filling + chocolate chips on top
Nutella + crushed pretzel topping
Marzipan+ pistachio
Walnuts + pistachio
Pitted cherries + coconut
