I've been home this past week, which means endless Chicago Fire episodes and a fridge full of yummy ingredients to experiment with. But before I talk about this dish, lets talk about Chicago fire. I just hit the part of Dawson and Peter Mills. Aah.
However, I started watching Chicago Fire rather unconventionally. I started with that episode where they joined forces with Chicago PD (because, yes, I'm a chicago PD fan) and then I got hooked on chicago fire and just had to figure out what was happening. Since that was season 2 I just ended up watching the last 3 episodes until the season finally of season 2 and then went backwards and started at episode 1 of season 2. (confused yet?) Then I now, have started with season 1 episode 1. Wondering why I am so weird with my TV watching? Well, because having a HuluPlus membership is as good as garbage. They never have anything on there that you want to watch, plus there are stinking ADS! hello? Who's with me. Sorry Hulu, you can be so much better but you're failing me and that is not okay. So I gave up, switched to the beautiful Amazon Prime. Which then they didn't have season 1, so now I had to go and buy season 1 from Amazon prime and am making my way through (no pirating episodes for me)! Episode 13 everybody... finals are over and it's Fire + mango slaw time!
I'll leave to you to this recipe and see if how Dawson dumps mills and heads to Casey... wooop? Spoiler! Sorry!! ;)
1 head Green Cabbage, sliced thin
1 Mango, julienned
1 Red Onion, sliced thin
1 Red Pepper, julienned
3 Persian Cucumbers, seeded, julienned
2 springs of mint, chopped
1 tsp. minced garlic
1/4 c. white wine vinegar
zest of 1 lime
juice of 2 limes
1/2 tsp. sea salt
1 tsp. black pepper
1 tsp. red pepper flakes
Yields 8 (1 c. servings)
Mix all liquids together. Toss with slaw mix and coat with fingers. Refrigerate for a couple hours before enjoying.
Pairs great with grilled chicken, tangy shrimp (a little lime juice and pepper flakes) or alongside some tri-tip sandwiches!
