Best Friend Sushi

A little bit of background on this dish and why it holds a special place in my heart today. My best best best friend (M) and I have this long standing tradition that anytime we come back home we get together and go to a local sushi restaurant that we've been going to since high school. In high school we were like the only two amongst our friends with a fascination for sushi, until of course everyone jumped on the bandwagon. But since we went to different high schools and Universities, we made this our tradition. No matter whether it was pouring outside or over 104 degrees as it usually gets around here, we would go in for sushi. Even if that meant we ate raw fish at 10am (which has happened before!)

We've been friends for over 15 years so she's definitely my ride or die gal! But today, i'll bid her adieu as she travels to London for a year! What?? new place to crash in the most beautiful of all cities? Hell yes!
 But in honor of her fabulous traveling journey I wanted to create a recipe that resembles one of my go-to dishes at our Sushi Bar, Spicy Tuna!

This recipe was just too fun to make! Since I didn't have any grade A tuna, I was like well... what can make this dish a little more "vegan-isque". So I decided to roast some red bell peppers and soak them in thai chili sauce overnight with a little sriracha. I know... thai chili + sriracha= where is the milk??? But it was great, trust me!
Ingredients:
3 Red Bell Peppers
2 tbs. Thai Chili Sauce
1 tbs. Sriracha
1 tbs. White wine vinegar
2 c. Cauli-rice (no saffron added)
handful of baby spinach leaves 
4 large Seaweed Sheets

Directions:
Preheat oven to 400 deg F. Cut red peppers to remove seeds, roast in baking sheet for 35 minutes. Need to be super tender. In a small bowl, mix together Chili Sauce, Sriracha and Vinegar. Coat roasted red peppers and refrigerate overnight. 
Julienne peppers next day. Place 1/4 c. cauli-rice on the edge of a seaweed sheet. 
Add julienne peppers and baby spinach. Roll very, very tightly. Seal with a little bit of hot water! Cut with a serrated knife and ~ENJOY!

See you soon my beautiful and adventurous best friend since preschool! You were there for me since the beginning of my education! I didn't know anyone there or a lick of English! But you stood next to me and held my hand and for that i'll be forever grateful! Here you go, pathing the way for me to join you travelling up later! Prayers for safe travels and don't you dare lose your palate for sushi when you get back!
