1 red bell pepper
2 tbs. balsamic vinegar
2 tbs. coconut oil
4 large eggs
sea salt & black pepper, to taste

Directions: Cut up bell pepper, length-wise so that they resemble "hearts". Make sure to cut them thick enough. The problem with these messed up pinterest recipes is when people cut the slices too thin. Then the egg seeps out from the bottom of the pan causing a big 'ol mess. So cut them at least 1" thick, if not more. Soak slices in balsamic, using a deep dish pan.
In a frying pan, melt coconut oil. Add in 1-2 slices (depending on size of pan) cook fully on both sides. You may need to use the lid, in order to trap vapor to cook the center of your slices. Once it's almost cooked (not mushy, should still have a crunch to it) crack an egg, ever so gently inside the pepper. Cook until desired egg consistency. Top with salt and black pepper!
