The most wonderful time of year is almost upon us! Boy how this month just flew on by. I've just been baking, every single day over here! But i'm sure you all have been enjoying it :) I have to cram all of these delicious cookie recipes in here before the 25th! So be prepared for a couple more Christmas cookies recipes coming your way!
The inspiration for these came from the fact that I, like all other children, have been "dreaming...of a white....Christmas" but since I live over here in Cali, it's not gonna happen. So, I wanted a "snow-like" cookie topped with delicious peppermint. Nothing says Christmas time like peppermint, right? Plus, I did buy 2 boxes of mini candy-canes, so any chance I get to throw them into a recipe, i'm all over it!
2 1/2 c. all-purpose flour
1/2 tsp. baking powder
1 tsp. baking soda
1/2 c. butter, unsalted, softened
1/2 c. coconut oil, melted
1 c. coconut sugar, white
1 tsp. peppermint extract
1 tsp. vanilla extract
1 large egg
crushed peppermint candy canes
1/2 c. powdered sugar
Directions: Preheat oven to 375 deg. (F). Cream together butter, coconut oil, sugar, peppermint and vanilla extract. Add in cold egg and combine well. Slowly mix in dry ingredients, flour, baking powder, baking soda, and sea salt.
Take 2 tbs. rounds and smush down until they are 1/2 " thick. Bake for 10 minutes, on a parchment lined cookie sheet or until golden brown on the edges. Take off of pan and cool on wire rack. Meanwhile, stir together crushed candy canes and powdered sugar in a small bowl. Scoop 1/2 tbs. of dust on top and spread around. Let cool completely on wire rack and then dust off any excess back into your dust bowl. This stuff is like crack, you want to keep all the excess!
