Chocolate Chip Pumpkin Mug Cake

The fact that I haven't posted in quite some time should be a testament to how busy my schedule has been this semester. Trying to juggle 3 different jobs, classes, work-out schedule AND making time to cook tons of pumpkin dishes... is proving to be a lot more challenging than I thought. 
But October will only be here for another 2 weeks (crazy how time flys!) so I still need to make sure I savor all those delicious pumpkin dishes — and so should you!

This one's a quick recipe.. so quick in fact, it should take less than 5 minutes TOTAL. Total as in, find ingredients, add to cup, mix, nuke, and devour. Trust me, it'll be gone just as quickly as you whipped it up! 


Recipe:
2 tbs. pureed pumpkin
1 egg white
1 tsp. honey
1 1/2 tbs. coconut oil, melted
3 tbs. almond meal
1/2 tsp. baking powder
1/2 tsp. pumpkin pie spice
1 tbs. mini Enjoy Life Chocolate Chips (or dark chocolate chunks)

Yields 1 pumpkin cake 

Mix, microwave for 2 minutes and 15 seconds!
