Stuffed Turkey Patties

Now that it's summer time, everyone is firing up that grill and making the traditional burgers and hotdogs! How about we try some Paleo burgers, shall we? Of course, we're skipping the bun here, but there are so many flavors bursting inside this stuffed burger you won't miss the bun... guaranteed! Who needs those excess non-nutritive calories from a buttered bun anyway? 
This burger is pan fried and baked. Sorry, i'm a college student... no grill in my budget, no room for it either! So I settled, pan fry for extra crisp and bake to make sure that it cooks through. 

Nutrition Facts are for 1 serving

4 oz. Extra lean (98%) Ground Turkey
1 tbs. onion powder
1 tbs. garlic powder
cracked black pepper
4 sec. coconut oil spray 
1 c. spinach
1/2 yellow onion
1 tsp. cayenne pepper 
1 tsp. cumin powder

Yields 1 serving 

Directions: Preheat oven to 325 deg. F. In a small bowl, mix together turkey, onion, garlic powder and black pepper. In a saute pan, lightly sautee spinach, chopped yellow onion in pan sprayed with coconut oil until golden-brown. Season veggies with cayenne pepper and cumin. Allow skillet to cool before scooping it inside your meat patty.  Form into a circular ball and pat gently, as to not let any veggies seep out. Lightly sear patty in a pan of more coconut oil spray. When both sides are seared place in oven safe pan, lined with aluminum foil and bake for 20 minutes, or until insides of meat are fully cooked. 

I personally like to eat this on a bed of fresh baby spinach. :)
