Banana Bread Muffins

I would like to thank Trader Joes for selling their bananas for $.19, yeah you read that right... $0.19! This obviously leads me to buy 10 bananas at a time instead of the normal people amount of 2-3 bananas. So with 10 bananas sitting around my kitchen, it was just a matter of time until they turned a fabulous BLACK color. Don't get me wrong... black = good.

Good for making banana bread... isn't that the point Trader Joes is trying to make by selling their bananas so cheap. Right? Well, since i'm just baking for one person, an entire bread loaf wasn't reasonable. 

Cue fantastic PALEO banana bread muffins.

3 very ripe bananas ~ 1 1/2 c.
1/4 c. unsweetened almond milk
1/2 c. almond meal
1/2 c. coconut flour
2tbs. coconut oil melted
2 eggs, 2 egg whites
1/2 tsp. baking soda
1 tbs. cinnamon
1 tsp. nutmeg
1 tsp. vanilla extract
sea salt
4 tbs. Mini Enjoy Life Chips

Yields ~ 14 muffins

Directions: Preheat oven to 350 deg. F. Mix together mashed bananas, almond milk eggs (whole eggs + whites), vanilla extract and coconut oil in a small bowl. In a larger bowl whisk together almond meal, coconut flour, baking soda, cinnamon, nutmeg and sea salt.  Combine together wet and dry ingredients and stir well. After combined, stir in Enjoy Life Chips. Scoop 2 tbs. batter into regular-sized silicon baking cups scoop bake for 25 minutes.
