Grilled Salmon with Summer Salsa

It's ALMOST summer, right? I have a reason to make this now right! Since it is almost my finals week I needed a quick, light meal that was full of essential oils that are good study buddies! This light meal was so delicious and easy to make that I couldn't help but giving a little summer-time teaser! 

Found these yummy veggies in our local farmers market and could not resist! Summertime= grilling time full of yummy light meals!

 Start by seasoning a 5 oz. Wild Salmon filet with olive oil, salt and black pepper. Grill it, either outside, on a george foreman or on a pan griller. Sear both sides to beautiful grill marks and let it cook through fully.
Meanwhile, cut up some cherry tomatoes, sweet peppers and cucumber. Toss with some freshly squeezed lemon juice and lime juice. Sprinkle with some more Extra Virgin Olive Oil and let sit until your fish is cooked. Top your crusted, grilled salmon with this salsa and ~ENJOY!
