This may be my first ground beef recipe, and i'm pretty dark excited about it! This healthy salad is quick and easy to make and requires minimal "prep time". Those are the best meals, I think!
Although, i've been trying really hard to stay away from lots of red-meat, an occasional ground beef salad won't kill ya! Plus, this one was made using 98% fat-free, grass-fed beef, so it was considered EXTRA lean... yum!
1 c. baby spinach
3 oz. Grass-fed Ground Beef (98% fat-free)
1 tsp. paprika
1 tsp. red pepper flakes
1/2 c. kale
5 roasted low-salt cashew, in pieces
1 tbs. coconut oil
Directions:In a skillet, heat coconut oil and add kale. Sautee until wilted, may need to add 1/4 c. water to get the process going. Just be careful when adding water to hot oil, it splatters everywhere.
After kale has sauteed down, add in meat, paprika, and red pepper flakes. Cook until browned.
Place 1 c. spinach in a salad bowl, and top with meat and kale mixture. Sprinkle cashew pieces and top with black pepper. ~ENJOY!
