Similar to my "Cinnamon Almond Muffins" I wanted to make use of my Homemade Almond butter that I posted recently! Also, since I'm back in school now I find myself always wanting "Study snacks". Personally, the best study snacks in my opinion are crunchy things. The only thing better than a nice crunch is...chocolate! This recipe also makes use of my SF Chocolate Chunks, that are baked right in and they hold their form well actually! At first I thought they would fall apart, but they held up quite nicely.
1/2 c. Creamy Raw Almond butter
1/4 tsp. baking soda
2 tbs. unsweetened cocoa powder
1/4 c. +1 tbs. almond milk, unsweetened
1 tbs. stevia (or brown sugar/honey)
1 tsp. vanilla extract
1/2 c. Homemade Chocolate Chunks
1 whole egg
1/2 tsp. sea salt
Yields ~6 muffins
Preheat oven to 350 deg (F). Combine all above ingredients together (except chocolate chunks). Fold in chocolate chunks.
Spoon into muffin tins that are lined with cupcake liners. I like to spray the inside of my liners with a non-stick spray like PAM, to ensure no sticking. Or you can use silicon liners (if you have those).
Bake for ~ 22 min.
