April is still Asparagus season which makes this dish a winner in my book for a quick and healthy dinner! You know that saying "set it and forget it"? I think it use to be on an commercial for a slow cooker back in the day. Well that saying goes perfectly with this dish. You assemble, preheat, place in oven and forget about it! Until of course, your kitchen timer goes off and you're ready to enjoy every single bite of this delicious meal. Mouth. Watering. Now.
1 bunch asparagus (6-7 stalks)
4 oz. wild caught salmon
1/4 c. fresh squeezed lemon juice
1 tbs. fresh squeeze orange juice
1 tsp. fresh thyme
1 tsp. garlic powder
Himalayan pink salt to season
Cracked black pepper
For the Salmon- Season with salt and cracked black pepper. Add some fresh-squeezed orange and lemon juice and top with some thyme sprigs. Turn on your broiler to high. Place for 5 minutes. The salmon should be "melt-in your mouth" ready by this point!
For Asparagus- Preheat your oven to 375 deg. (F).Line up your asparagus and drizzle with extra virgin olive oil and season with salt, pepper and garlic powder. Bake for~ 20minutes.
