Happy St. Patrick's Day! I hope you are all remembering your green today! With that in mind, I deemed it very appropriate to finally debut my (daily breakfast) milkshake! When I say "daily", I mean it. I feel like i'm always in a rush in the mornings. I think, I don't sleep enough at night so I try to make up for it in the morning...by pushing snooze about a hundred times! I feel so bad for my neighbor, i'm sure he loves my alarm clock by now.
Usually, i'll be the first to say liquifying your meals isn't the best idea. It doesn't keep you full enough and some times (not every time) you forget your portions. Instead of eating that 1-2 serving of fruit/day you end up eating 1 banana, 1/2 c. orange juice, half a bag of frozen strawberries... and maybe just maybe a carrot as your "vegetable". This is why liquid meals aren't usually the best.
But picture this: Kale, Spinach, Coconut milk, mint and banana? You get most of your veggies (that you would in a meal) and a fat in the coconut milk. Yes, you are missing an essential, protein. But I always pair this with 1, 2 hard boiled eggs. I make those the night before, so it's easy to just run out the door with them.
Meal-shakes should not replace a nice hearty meal every-time. But when you have 10 minutes to pack up your backpack, lunch and run clear across the parking lot to catch your bus... a shake will just have to do.
1 c. spinach leaves
1 c. kale leaves
1 small banana, ripe
3 mint leaves
1/2 c. full-fat coconut milk
1/4 c. filtered water
2 c. ice cubes
Recipe: Place everything in a blender and combine. This was just the right amount of liquid for my blender. But you may need to alter the amount of filtered water and/or coconut milk you use based on the speed of your blender. You will more likely need more liquid then I have written.
