Cinnamon Apple "Oatmeal"

While I was on the Whole 30 in February, I suddenly found myself getting really tired of my breakfast choices. Me? Tired of eggs? NO WAY!
Truly, I was shocked. I absolutely love breakfast —and eggs. Well after trying every variation of eggs known to man, I began craving hearty "sweet" breakfast foods. 

Yes, I'm referring to oatmeal, bread pudding, cream of wheat anything warm and filling basically. It may just be the weather change that makes me so nostalgic for oatmeal. Never was a huge "big bowl of oats" type of girl.
Even if you don't like oatmeal or cream of wheat now- try this. Just TRY THIS recipe! You will soon be converted... I know I am! 
1 tsp. ground cinnamon
1/2 tsp. nutmeg
3 tbs. coconut manna (or coconut butter)
1/4 c. coconut milk, warmed

Directions: I used store-bought coconut manna, but homemade works just as good, if not better! I'll have to put up a homemade manna recipe soon! But if you use store bought, you'll need to warm it up first so it's nice and runny. The best way to do this (i've found) is to put it in a sauce pot of boiling water. When the water begins to boil, drop the heat to low. If you leave it boiling, it burns the manna through the glass. Stir the manna ever so often to get the oils working together to blend up. When all liquified, measure out 3 tbs.

 In a large bowl add in your apples, manna and coconut milk. Stir together well. Place in microwave for ~ 45 seconds (just enough for the milk to get warm. You don't want to "cook" anything. Just heat things up. If it's not hot enough for you, place it in there again. Try to not exceed 1 minute 30 seconds, or the manna will start burning and the whole meal will become too dry.
 Sprinkle more cinnamon and nutmeg on top and ~ENJOY!

  1. Coconut flour makes a good porridge. Though I am not sure if that is Whole30 approved.
