Green Eggs...NO Ham

I know I did a whole month of egg dishes back in 2012-but this recipe was so good I couldn't pass it up! To make Whole 30 approved omit cheese (its still very good without!) Since I don't eat ham i cant make it a true Dr. Seuss' novelty! But I think we will manage. ;) 

This yummy dish is made with pan-fried green tomatoes with an egg on top, sprinkled with mozzarella cheese and creamy pesto! It just sounds delightful doesn't it? 

Found these yummy tomatoes at the local farmers market! I love going over there because the farmers give you great advice on how to cook the vegetables you just bought! The farmer who sold me these tomatoes gave me the genius idea to fry them with a little coconut oil to bring out the nutty flavor! It was quite delicious, especially topped with a runny fried egg! mmm...


1 lg. green tomato
1 tbs. coconut oil
1 lg. egg
1/2 oz. Mozzarella Cheese (optional, omit if on whole30)
1 tbs. Pesto (I used "Genova Pesto" from trader joes)
ground black pepper to taste

Yields 1 serving

DirectionsSlice tomato into 1/4" slices and fry in 1 tbs. coconut oil.
 Fry until they are golden on both sides and place on a paper toil to drain out any extra oil. Although coconut oil is a "good for you" oil, I personally don't like my foods dripping with oil.

Use remaining coconut oil to fry your egg. Then stack up your fried (and drained) tomatoes, egg, and top with mozzarella cheese. Drizzle pesto on top!
