Whole 30 "What I put on my plate" Day 5

I'm so excited to report- I have finished my first week back at school! I thought it would be hard considering my new Whole30 challenge tacked on to all my classes and new workout schedule. 
This week has been a little roller coaster (emotionally)-which after hours of research i've come to realize might be a symptom of caffeine withdraw. I am still caffeine less after 5 days! For someone with a Keurig who drinks AT LEAST 2 cups before lunch time, this is a challenge. I haven't even had a cup of black coffee in 5 days! Woo!
Had some delicious food today and tomorrow I'll be going out to eat for lunch with a special friend who's coming to visit! I'm looking forward to my first fast-food Whole30 challenge. 
Meal 1: 4 eggs (3 whole + 1 egg white), jalapeno cabbage and spinach scramble. I really enjoy scrambles if you can't tell! I like a nice hearty breakfast to hold me over for the rest of the morning.
Snack: I had a total of 8 macadamia nuts all day. Some I had before lunch and some after.
Meal 2: I had a small piece left over from my salmon filet from last night. It was baked with some fresh squeezed lemon, garlic and jalapeno  I ate it with 3 persian cucumbers, 1/2 an avocado and some sautéed veggies. I sautéed (in ghee) the rest of my mushrooms (they were beginning to go bad) and the last 1/4 c. of my squash sticks from Wholefoods.

Snack: I had more White Raspberry tea from the local coffee shop today. Was trying to do some studying...on a friday, I know crazy! I also had a couple celery sticks ~ 2 small sticks and a hard boiled egg.
Meal 3: I seared an Italian Eggplant on my fabulous stove-top grill pan I bought from Ikea. I greased the pan with coconut oil. I find that coconut oil and eggplant pair very well together. Since eggplant absorbs a lot of the oil it is being cooked in-what better idea than to absorb good fats like coconut oil! I ate alongside a small salmon filet that I crusted with unsweetened shredded coconut (recipe might be up soon! it was really good!) I baked half a sweet potato, that was cut into wedges, and made into spicy sweet potato fries! They were so soft and delicious that I even skipped the Ketchup. Just kidding, that ketchup is not whole 30 approved!
