Meal 1: Realized this morning-I have some brussel sprouts in the freezer and more yellow onion in the pantry. BAM new breakfast idea. I definitely had that tiger blood today. I made breakfast + lunch all before 10am... with NO coffee. That's amazing right there.
First I sauteed the brussel sprouts in coconut oil until soft. Then I added the onions and browned them. Right before I was done, I added some balsamic vinegar and let it sit for about 4 minutes-so it all incorporates. DONE boom, side dish for 2 meals is complete.
I ate it with a side of eggs and a cup of green tea for breakfast.
So like I said earlier... Tiger Blood. So I quickly marinated some chicken breast I had defrosted last night. I cut it into strips and placed it in a boil of ~ 2 tbs. fresh squeezed lemon juice, 1 tsp. fresh thyme, 1 tbs. minced garlic and 1/4 tsp. fresh ground black pepper. Mix well with fingers and cook in 1 tbs. coconut oil over medium heat. I added the brussel sprouts side as my veggies for this meal. Since both were cooked in coconut I skipped the "Avocado" since I had my fats already.
**A comment on the container. This is a new purchase here at MakeWithYourHands. It's the collapsible eco lunch box. It's truly awesome. It can be microwaved, dishwasher safe, and comes with a spoon/fork utensil and a "sauce" station. It does have a lid that is not pictured here but it's great for those on the go. When you're done with your meal it collapses down (basically flat) for easy storage. (I have not been endorsed by the makers of this-this is just merely my opinion).
