Sugar-Free Homemade Chocolate Chunks

I've been needing to use a lot of chocolate "chips" in recipes lately and was scrapping my brain for recipes to make a "sugar-free chocolate chip". Resembles my Paleo Bark recipe with slight changes.  I've made so many recipes and keep them chopped up in small snack sized ziploc bags in the freezer! 

4 tbs. virgin coconut oil
1/2 tsp. almond extract
2 tbs.SF simple syrup
1/4 c. dutch cocoa powder

Directions: Mix together all ingredients and pour mixture into a pre-chilled parchment* lined pan. 
*The key here is to have your pan, "pre-frozen". Put your pan in the freezer about 30 minutes before you begin to make your chocolate, that way it's nice and cold when you line it with parchment and pour it in!
Freeze for at least 30 minutes, but preferably overnight. Chop up into chunks and use as "chocolate chips" that you use would need in baked goods. Store chunks in freezer until ready to use! ~ENJOY!
