Mint M&M Holiday Cookies

Now that everyone is done with finals, it's time for a bunch of holiday cookie recipes! Get ready for post after post of scrumptious delights such as these! 
These minty festive delights were so easy to make, but have been the most popular among all other cookie swap recipes this year! I found these awesome Mint M&M gems at the local grocery store and I was dying! This was the greatest things since sliced bread! Well, okay maybe not that extreme but these are a real treat! I found the holiday colored Mint M&M's and the creative juices started flowing for these delicious chocolate cookies. 
But as you know, I had to make a more "healthy" version that was still very simple
1 c. coconut flour
3/4 c. coconut palm sugar
1/2 c. grass-fed butter
1/2 c. dark chocolate chips +more for topping!
1/2 c. unsweetened cocoa powder
1 tsp. pure vanilla extract
1 egg + 1 egg white
1/2 tsp. cinnamon
1/2 tsp. baking soda
1 c. M&M Mint holiday edition** (read below if you can't find these!)  
pinch of sea salt

Yields ~ 20 cookies

Directions: Preheat oven to 325 (F). Mix dry ingredients together (minus coconut sugar).

Melt butter, chocolate together in microwave.

Cream together eggs, vanilla and sugar. Add in chocolate mix and stir well. Whisk in dry ingredients slowly.

Fold in M&M and chocolate chips. Scoop 1 tbs. rounds on a parchment lined baking sheet. Place extra M&M's and chocolate chips on top. Bake for 15 minutes and ~ENJOY!

I've made these cookies twice and both times, they have been a hit! Wrapped them up in a cute coffee mug with cellophane and pretty ribbon for a quick and tasty christmas gift!
**The second time I made these cookies, I couldn't find any Mint M&M's in my hometown. So I had to improvise. I chopped up some Andes Mints and measured out 1/2 c. to use in my cookies! I also used regular milk chocolate holiday M&M's to keep the christmas theme going. This is a best way to improvise for those mint M&M's!
