Marshmallow Homemade Brownies

I made these fabulous brownies for my coworkers a couple weeks ago, and when the marshmallows set and got hard... oh man. Naturally, I would say to quickly pop the brownies in your mouth right away. As soon as the marshmallows have melted and the chocolate chips are nice and melted they need to be in your belly! 
This was really unrealistic for me at the time, because I was taking them to work! So I cut them all up and packed them up to-go! The marshmallows were nice and crispy (as you can see in the photo) and they were still, TOP. NOTCH.

Just try 'em.


1 1/4 c. coconut flour
1 tsp. baking powder
2/3 c. unsweetened cocoa powder
1 1/2 c. Stevia
1 c. grass-fed butter
2 eggs + 1 egg white
1 tsp. pure vanilla extract 
1/2 c. dark chocolate chips
6 lg. marshmallows, cut half-wise
pinch of sea salt

Yields ~18 1"x1" squares


Preheat oven to 350 deg. (F). Mix together dry ingredients. Melt together half chocolate chips and butter in microwave in 30 sec. intervals. Combine together chocolate mixture and dry mixture with chocolate chips. Combine together well. Pour into a greased 9x 13 in pan. Bake for 22 minutes. Pull out at 22 minutes and top with marshmallows that have been cut half-wise. Broil on high for 2 minutes, or until bubbly! Pull out and serve immediately!

If you don't serve right away, just know that that the marshmallows become "hard", personally, I like this the best way! I took these brownies to work and the girls loved them when the marshmallows got hard! It adds an extra crunch!
