I knew almond butter was the next big thing, glad I got on the bandwagon early this time! If you are new to almond butter, or are still a little weary of replacing "Skippy" read through this recipe and you wil be converted... guaranteed!!
One of these days i'll post a homemade almond butter recipe- it's just too easy to pass up!! But now, it's muffin time! Best part about these muffins, short of making your house smell delicious, is that they are made with NO refined grains or sugars! I should call these "no muffin top" muffins, get it? :)Recipe:
1/2 c. roasted almond butter, creamy
1/4 tsp. baking soda
1 1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 c. almond milk
1 tbs. honey (or sweetener of choice)
1 tsp. chopped roasted almonds, optional
Yields ~ 6 muffins
Directions: Preheat oven to 350 deg. (F). Mix together your dry ingredients-cinnamon, nutmeg, baking soda- and set aside. Mix together, almond butter, egg, milk and honey until combined. Combine dry ingredients with wet mixture. Spoon about 2 1/2 tbs. into lined cupcake pans. Top with chopped almonds (if using) and bake for ~18 minutes!
Pair with a nice cold glass of Almond Milk!
