Egg Month: #3 Spicy Tomato and Spinach Scramble

 Being back at school has reverted me back to my CHEAP eating ways... but isn't that the norm for every college student? I think so. So many of my dishes will contain one of the healthiest, cheapest thing: Eggs. I ended with 24 eggs for $2.99. Thank you Costco!  So get ready for some HIGH PROTEIN and easy on your wallet recipes!
 Start by saut√©ing 3 c. spinach with a little olive oil ~ 1 tbs, and 1 tbs. chopped garlic. Next, cut in half 2 c. cherry tomatoes. Mine were really big so I cut them in half. Next add in 1 tsp. red pepper flakes to your tomatoes. Just as they are getting soft toss in your eggs. I used 2 egg full eggs (yolk + whites) and 4 egg whites. Scramble it all up. Cook well and topp with half an avocado chopped *OPTIONAL*. Sprinkle with black pepper and you have yourself some AMAZING breakfast! ~ENJOY!
