Start by sautéing 3 c. spinach with a little olive oil ~ 1 tbs, and 1 tbs. chopped garlic. Next, cut in half 2 c. cherry tomatoes. Mine were really big so I cut them in half. Next add in 1 tsp. red pepper flakes to your tomatoes. Just as they are getting soft toss in your eggs. I used 2 egg full eggs (yolk + whites) and 4 egg whites. Scramble it all up. Cook well and topp with half an avocado chopped *OPTIONAL*. Sprinkle with black pepper and you have yourself some AMAZING breakfast! ~ENJOY!
