I hope you're not getting tired of eggs yet! Although, most of these recipes have been "scrambles" / Omelets, one can never have too many ideas on what to throw together in a scramble...right? Midterm season has picked up a little bit, and with all my many science classes i've been super busy with school and neglecting this blog! I apologize and hope this recipe and the one to come make up for it! (stay tune for a "egg-tastic" Pizza! homemade crust, with a cracked egg on top... mmm)
This dish is super fast, healthy and full of nutrients! I paired mine with a huge helping of cherry tomatoes, but feel free to pair with celery sticks, carrots, or maybe some sliced apples?
4 c. raw spinach
1 tsp. garlic, chopped
1/2 tbs. Virgin Coconut Oil
3 eggs + 2 egg whites
2 oz. Goat Cheese, (full-fat)
Sea Salt & Black Pepper to taste
Directions: From the looks of the recipe, I hope you're thinking... "SUPER EASY"! Well, you are correct! Basically heat up your coconut oil, saute spinach until soft with chopped garlic. Add in eggs and cover with lid for ~ 4 minutes. If you like your eggs really runny, don't cover as long! Top with goat cheese and season with salt and pepper. Once again, pair with whatever you like: apples, orange slices, celery stalks, or in my case cherry tomatoes! ~ENJOY!
