Egg Month: #5 Crust-less Zucchini Fritta with Goat Cheese

Have you been getting sick of eggs yet, I HOPE NOT! Cause it's still October which means it's still EGG MONTH! This time I decided on a crust-less "Fritta". Plus, baking eggs is a lot more tasty than fried- although, I love those too!
8 egg whites
1 whole onion, sliced
1 whole green zucchini, chopped
1 c. chopped mushrooms
1 tsp. cayenne pepper
2 tsp. paprika
2 oz. goat cheese
2 tbs. sour cream (fat free), Optional
sea salt & black pepper to season
Chop up all veggies and sauté in a pan with PAM spray. Season with salt and pepper, cayenne, paprika. Saute until veggies are soft.
Yields ~2 servings
Add in eggs and place in oven for 35 minutes on 350 degrees (F).  
 Once out of oven, top with goat cheese and sour cream (if using). Eat while warm and ~ENJOY!
