Egg Month: #4 Green is Good Egg White Scramble!

 GREEN is GOOD. This is an all green scramble! Yummy yummy!! Yet another egg recipe, but like I said in the first one. COLLEGE STUDENT = low on cash. Eggs are the cheapest yet healthiest thing. Everyone knows the traditional way to eat eggs... scrambled, sunny side etc. But lets fancy this up a little shall we?
Yields ~ 2 servings
Saute 3 c. spinach in some olive oil until its wilted and tender. Add in 2 tsp. turmeric powder and mix well. Add in 8 egg whites, scramble up. Chop up half an avocado and add into the hot saute pan. Leave on heat for only about a minute. You don't want to heat the avocado up too much. Sprinkle with crushed black pepper. EAT YOUR GREENS and ~ENJOY!
