Egg Month #10: Open Faced Avocado Egg Pie

We are done with egg month!! I hope everyone's excited for this last recipe and on to some "fall-style" recipes! I had to end with this one because I basically eat it daily. It. Is. Just. That. Yummy.
Plain and simple! I decided egg month was a time to make things EASY for those early mornings! I ended up having class every morning before 8am. Yeah not a very good schedule maker ha! So I need something easy in the mornings that will keep me fuller, longer! I hope you have enjoyed this months recipes and enjoy this last spicy/ tangy open faced pie!

3 eggs
1/2 avocado
1/4 c. red onion, chopped
1 jalapeno, chopped
2 tbs. lemon juice
Himalayan Pink Salt (or sea salt)
2 oz. Cheddar Cheese

Directions: Whisk together your eggs and cook as an omelet but do not fold over! Next assemble your avocado spread. Stir together avocado, lemon juice, red onion and salt. When eggs are done ( and you've flipped the "pie" onto both sides to cook thoroughly) add cheddar cheese and top with avocado spread. Pair with sausages, bacon, or a piece of fruit! And some coffee in my case! ~ENJOY


  1. This looks so good! I eat eggs pretty much every day for lunch, too - I love them. I usually do scrambled with cream cheese & shredded zucchini. But I will have to try this soon, because I could pretty much live off of avocado - yum!
