Blueberry, Lemon, Greek Yogurt & Oatmeal Muffins!
One of my best friends from HS was leaving back to college and we decided on a brunch as our last get together. Would you believe it if I told you that this was my first brunch? Well believe it! But honestly, it's wasn't even about the food but about the company.
But the food, helped! :) Here's a picture of our brunch table...
There was also a Zucchini Fritta involved, and some yummy greek yogurt with berries! I think I did good! Okay, back to the muffins! These are so easy (& tasty), it's scary!
Recipe:2 c. whole wheat flour
1 c. oats
1 tbs. baking powder
1/2 tsp. baking soda
1/2 tsp. sea salt
1 c. brown sugar
1 tsp. cinnamon
1/2 c. blueberries
1/2 tsp. nutmeg, ground
2 eggs, cold
1/2 c. vegetable oil (or coconut oil)
1 1/2 c. greek yogurt
zest of 1 lemon
juice of 1/2 lemon (1 tbs)Directions: Preheat oven to 350 degrees. Mix together yogurt and vanilla extract in a small bowl. Mix in eggs and coconut oil to wet mixture. Whisk together all the dry ingredients. Incorporate both mixtures together add in blueberries and spoon into 6 LG. muffin tins or 12 reg. sized muffins. Bake for 20 minutes and ~ENJOY!
