I saw this Pinterest pin for beer battered onion rings, can I just say I was immediately IN LOVE! I wanted them so bad, so bad that at 10pm I started cutting up onions and the tears started running down my face (from the onions-duh!)
But then I remembered, I don't eat flour! So next best thing, my fabulous secret weapon... Flax Meal! mmmm. tasty.
I don't have any photos of the process but you get the picture, it's just frying yummy onions!
2 yellow onions
1/2 tsp. paprika
1/2 tsp. cayenne powder
1 tbs. sea salt +more for taste
1 1/2 c. ground flax meal
1 tbs. dried oregano
2 egg yolks
4 egg whites
2 tbs. unsweetened unflavored almond milk
Oil for frying
Directions: Heat oil for 375 degrees in a "Deep frying pan". I happened to have one of those cool frying machines that my mom bought years ago and never used...until now! Cut up the two onions and carefully separate them into rings. Place in a large bowl and sprinkle with 1 tbs. sea salt (makes them sweat and allows for things to absorb). Next, sprinkle paprika, cayenne over onions and stir well so they stick. Onions should appear "red" in color at this point. In a long bowl mix oregano and flax meal (this will act like your flour). In another bowl "scramble" together eggs and milk.
Here comes the assembly line. Onion ring, 1 ring, flax meal mixture shake it around well, egg mixture, oil. Same thing again. Onion ring, flax meal, egg, oil, mouth. MMMM.
