Cinnamon "Sugar" Almonds

I know what you're thinking... how hard are coating almonds in sugar? Well the answer is, not very hard. But hey, have you tried it with splenda? There are so many recipes out there for these yummy, crunchy treats and here's mine!


3 c. raw almonds
2 egg whites
1 tbs. vanilla extract
1 tbs. almond extract
1/2 c. cinnamon powder
1/2 c. coconut sugar

Directions: Preheat oven to 250 degrees. In a small bowl mix together egg whites and both extracts. In a ziplock bag mix together cinnamon and sugar. Next, is pretty self-explanatory. 
Take raw almonds, soak in egg mixture and drop into bag. 
Shake well to coat and place on parchment paper lined baking sheet.
 Put in oven for 2 hours. Turn off oven and let sit for 30 minutes. Take out and ~ENJOY!
