Here is my lovely chocolate mousse/ chocolate frosting recipe! Best used on my chocolate cake, recipe found here. Here's what you'll need:
1 oz. unsweetened baking chocolate, melted
1 tsp. instant espresso powder
1/4 c. + 1 tbs. heavy whipping cream
1/4 c. unsalted butter, softened
1 tsp. vanilla extract
1 tsp. cocoa powder
3 packets of Truvia Sweetener
Melt baking chocolate in microwave and stir every 30 sec. Mix in vanilla extract to chocolate mixture. Leave chocolate to cool to room temperature. In electric mixer add in room temp chocolate mixture and heavy whipping cream. Begin to whisk together. Add in softened butter, espresso powder, cocoa powder and truvia packets. Whisk for ~ 2 minutes until combined.
Final product, YUM! Makes about 1/2 c. of frosting!
