Espresso Kisses



The clock struck 4pm and the first thing that ran into my mind DESSERT & COFFEE. I know you think of that too...don't lie! Anyway, here's the thing: I don't eat sugar. Bummer, desserts = sugar. So I sorta improvised. I realized I was looking for a little bite-sized sweet! Came up with these espresso meringues! My first shot at meringues, and was not hard at all! (Wait till you see the best part... look down at calorie value! :))

Recipe:

2 egg whites
1/4 tsp. cream of tartar
1/4 tsp. sea salt
1/2 c. raw coconut sugar
1/4 tsp. instant espresso powder
1/8 tsp. ground cinnamon 

~Yields 20 meringues



Directions:  Preheat oven to 300 degrees. Line a baking sheet with parchment paper. Whisk together egg whites, salt and cream of tartar using an electric mixer on high. When egg whites are soft peaks add sugar and blend on high until the peaks are stiff. You'll know when this happens, when you move the whisk out of the bowl and egg whites are in peaks off the whisk and don't fall back in. Next, fold in espresso and 1/8 tsp. cinnamon.

Spoon with a teaspoon onto lined baking sheet.

Put in oven for 24 minutes (or until dried out). Once they come out of the oven, sprinkle with remaining 1/8 tsp. cinnamon and serve! 

Delicious hot or cooled! ~ENJOY!
