Peanut Butter Crunch Cookie


One of my most popular recipes here at Make With Your Hands, is this extra peanut butter-y Paleo cookie! Now, I know that "peanuts" aren't in the "paleo" diet. But there in my paleo diet. Only in the form of peanut butter. Sorry. I just have an obsession with Trader Joes unsalted organic chunky peanut butter. When I say obsession, I mean it. I could probably eat an entire chilled jar if given the opportunity. I wouldn't even flinch. Nothing on it, nothing mixed in. Just cold peanut butter. I guess it doesn't help that I live across the street to a Trader Joes, now does it? 

So when I devised this cookie it was a way to mesh my peanut butter obsession with the all-American favorite, chocolate chip cookies. I've seen tons of peanut butter cookie recipes out there and some that even throw in chocolate like I have done. But what about one that is grain-free. BOOM. Didn't see that one coming huh? 


Well if you've been following us here at Make With Your Hands, and I sure hope you are! You should come to expect my tendency to "paleo-fy" favorite dishes and present them in a healthy manner. I guess you can call it my "MO" — and I'm pretty proud of it. 


So enough talking, I'm gonna go grab the remainder of my peanut butter that's chilling in the fridge right now and cozy up to the latest episode of The Good Wife, while you all scroll down below and embark on the greatest cookie of your life! :)





Recipe:  
1 1/4 c. SUPER chunky peanut 
butter 
1 c. coconut sugar
2 egg whites
1 tsp. vanilla extract
1/2 tbs. cinnamon, ground
1/4 c. flax meal, golden
3/4 c. Enjoy Life Mini Chips

Yields ~24 cookies

Directions: Preheat oven to 350 degrees. In a mixing bowl, mix together peanut butter, sugar, egg whites, flax meal, cinnamon and vanilla until combined. Next, fold in chocolate chips.

Spoon about 1 table spoon worth of dough and roll using your hands. Place about 2 1/2 inches apart on a cookie sheet and bake for ~ 10 minutes. The top will be a golden brown but the insides will be soft to the touch.

    1. baking splenda is the greatest thing! Substitute it for any "White sugar" and you're good to go! :)
