Chocolate Chip Cookies

Good 'ol fashion Chocolate Chip Cookies are probably the easiest, yet the most delicious cookies you will ever let your taste buds indulge in! A thick, fluffy and totally chocolatey cookie in under 20 minutes!

1/2 c. softened butter, cubed
1 tsp. boiling hot water
1/2 tsp. baking soda
1 lg. egg
1 1/2 c. all-purpose flour
1/2 c. white sugar
1/2 c. brown sugar, packed
1 1/2 tsp. vanilla extract
1 1/2 c. semi-sweet chocolate chips
Yields ~ 1 dozen

Directions: Preheat oven to 350 degrees. Meanwhile, whisk together flour, white sugar, brown sugar, egg and vanilla. Combine boiling water with baking soda in a small bowl then pour into flour mixture. Next, add cubed butter and now you must use your hands to combine the butter pieces throughout the flour mixture evenly. Once you have thoroughly combined the flour mixture with butter add in chocolate chips and fold into dough. Freeze chocolate chip cookie dough for 10 minutes before spooning onto cookie sheet. Line cookie sheet with parchment paper and scoop 1 tbs. of dough and roll into little cookie dough balls with your hand and place on sheet. Leave at least 1 inch between the cookies for spreading! (because you froze the mixture, the cookies won't spread as much and become thin, they will puff up and be fluffy instead!) Bake for about 15 minutes or until golden brown! Hint: Make sure to freeze the remaining dough while the first set of cookies is backing, always make sure your dough is frozen before spooning onto the sheet!
