Dr. Seuss' Cuppy Cakes!


You may be wondering, what on earth are Dr. Seuss Cuppy Cakes?? Well, they are ENORMOUS, BRIGHT, VIBRANT and FUN cupcakes, yes-cupcakes can be FUN! The best part about these, is that they're easy to make but get loads of praise at any kids party, birthday party or just to spruce up a normal picnic!


Recipe:
2 egg whites ( no yolk, you want batter to be WHITE WHITE)
2 tsp. baking powder
1 2/3 c.  all purpose flour, sifted
3/4 c. butter, unsalted
3/4 c. white sugar
1 1/2 tsp. vanilla powder (not extract)
1/2  c. milk
1/4 tsp. cream of tartar


~Yields 9 HUGE cupcakes!




Directions: Preheat oven to 350 degrees. Mix together flour, baking 
powder, vanilla powder and cream of tartar (dry ingredients). Next in a separate bowl cream butter and white sugar until frothy, and add milk, and egg whites. Mix dry ingredient bowl with the wet butter mixture until batter is lump free. Next split batter into 3 separate bowls putting roughly 1/3 of the batter in each. Next find your 3 colors you want to use (I used green, blue, yellow but you can use any combination!) Dye your batter inside the 3 bowls with the individual colors of your choice i.e., one bowl has green batter, one bowl has blue batter one has yellow. Next line your cupcake tin with paper liners and begin the assembly line! Start with the "darkest" color you have created (for me that was green). Scoop only roughly around a 1 1/2 tablespoon onto the base of each cupcake liner. Next, fill the EXACT same amount ( 1 1/2 tbs.) of the next darkest color (e.g., blue) and continue until your 3 colors have been filled. Your cupcakes WILL be overflowing, but that's the point! You can top with a simple buttercream if you'd like, or leave them to shine on their own!


















*NOTE* if you are using more than 3 colors you want to put less than 1 tbs of each or your cupcakes will be MORE than overflowing! Bake for ~15-18 minutes or until toothpick inserted comes out clean. ~ENJOY!
