Mini Snickerdoodles

A childhood favorite for sure! Mini, bite-sized cookies, rolled in sugar and cinnamon will have your tummy thanking you! Pair with an ice cold glass of milk, and start indulging!

For cookie dough:
2 3/4 c. all purpose flour
2 tsp. baking powder
1 c. butter (2 stick)
1 1/4 c. sugar
2 lg. eggs
1/2 tsp. vanilla extract
1 tsp. cinnamon

For dusting:
2 1/2 tbs. sugar
2 1/2 tbs. cinnamon

Yields ~ 2 dozen
Directions: Preheat oven to 350 degrees. Whisk together sifted flour, baking powder, butter (keep at room temp.), sugar, cinnamon until combined. Then add vanilla and eggs (one at a time) until thoroughly combined. Dough should be pliable to formulate into rounds. Next mix together dusting sugar and cinnamon in a small bowl and set aside. Scoop up 1/2 tbs. dough and form into a cookie dough ball using your hands. Roll dough ball in dusting mixture and place on cookie sheet. Allow about 2 inches between each cookie because they will spread. Bake for about 13 minutes or until golden brown on top! These can be enjoyed for 3 days by storing in an air tight container! ~ENJOY!
