A light and sophisticated looking pasta dinner made in under 20 minutes. Al dente pasta, crisp Asparagus and warm poached egg, this combination will have your taste bud's screaming!!
Recipe: 1 c. Garden Delight Fettuccine Pasta 1 1/2 c. chopped cooked asparagus (about 12-15 stems) 2 Lg. Egg 1 tsp. Extra Virgin Olive Oil *optional* 1/2 tsp. Parmesan Cheese ~Serving Size 2~
Directions: Fill a large stockpot with water, add salt to taste and place on stove under HIGH heat. Wait until water has boiled to add in pasta. Follow directions on pasta package for al dente. Meanwhile, in a smaller stockpot boil water once again, and cook asparagus until tender ~4-5min. Strain pasta and reserve about a 1/2 cup of pasta water. *If your pasta seems really stuck together poor a little bit of the pasta water over it to loosen the noodles up. When asparagus is done cooking strain and cut into 1 inch pieces. Click here for directions on Poaching an Egg. Now it's assembly time! Pile noodles high on plate and drizzle with olive oil, top with cut asparagus and 1 poach egg. Sprinkle parmesan cheese if using and ~ENJOY!
